Well, first, going back to a different thread about hitting a pilot yoke and crashing the shuttle. Since two Trek shows did Blood Knight arcs it's a reasonable assumption AI is now severely limited in that universe. Especially once you add in the old Next-Gen episode about accidentally creating a sentient, evil AI (Moriarty) with a slip of the tongue. Also, honesty, for storytelling you need low AI or you have no show. You don't need Starfleet if you have cheap reliable AI. Just send out robot probes.
Now, on to food. ACADEMY is 32nd Century after "The Burn." What's "The Burn?" All the dilithium went bye-bye. You know, the thing that made all the matter/antimatter reactors work? My assumption is the 32nd century doesn't have the energy surplus allowing direct creation of everything via replication (and the Federation's socialist utopia in general). Which could absolutely lead to food issues.
In 21st century analogy 32nd century Trek ran out of oil and everything is solar, wind, and hydroelectric now. All three of which are much less efficient than burning petroleum.
Besides, Trek has often been inconsistent about such things. Movie era Enterprise had a galley, with cooks. With phaser lockers in the galley for some reason. I've seen "The Undiscovered Country!"
